PANE CARASAU
Sardinian Music Bread

Commonly known as carta di musica or "music bread". There are two theories for the name - its resemblance to sheet music and the delicate sound the bread makes when broken.
This bread is traditionally used by the shepherds as a plate which would absorb the drippings of their meal and then be consumed.
Made without the addition of preservatives, pane carasau is a healthy alternative to other breads. Its long shelf life will keep your bread basket full.
Hand made according to ancient methods, pane carasau is baked in woodburming ovens, split in half & baked again for its crispy texture.
CHEF TIPS:
Toast pane carasau with olive oil and salt (pane guttiau)and add to your bread basket or crumble into brothy soups to add flavor and texture.
When moistened, pane carasau softens and can be used as a large sheet of pasta for layered dishes or rolled with meats and cheeses for a quick snack.
For an interesting crostini, pipe a softened herbed cheese on to odd shaped pieces of pane carasau or spread a sheet with your favorite ingredients and toast lightly for a nouveaux pizza.
