Malloreddus Sardi
This staple of the Sardinian cucina is a trademark of traditional Sardinian primi piatti. Durum wheat semolina teardrop shaped pasta with distinctive ridges originally made by hand, rolling and pressing on irregular surfaces. Traditionally served with a hearty tomato and meat sauce (lamb, beef or sausage), Efisio also recommends malloreddus served simply with extra virgin olive oil and grated bottarga.
