To help people new to gourmet Italian cooking, we've created this small dictaionry to help you understand some of the words and terms that we use.  


DOP is an acronym for "Denominazione d' Origine Protetta" or Designation of Protected Origin.  This is a quality assurance label for Italian food products.  This phrase was made official in 1963 and is used to designate the top shelf of the top shelf Italian foods.  Products such as our Olio Novello are DOP quality products.



Mosto d'Uva is a hybrid term derived from Latin and Italian.  Musto or Must finds its roots in Latin and generally means "new" or "young" and D'uva is Italian for "grape" or "of grape."  A Musto D'uva typically has various quantities of pulp, stems, and seeds and do a lot to define the character of the sauce or wine that is derived from these grapes.  The Mosto D'uva has a very long history in cooking originating in ancient Rome.  If you're interested in cooking with a Mosto D'uva, be sure to check out our sauce derived from the Carignan grape.


Saba is syrup that derives from the must of grapes.  Slowly cooked into a syrup, the grape juice develops a rich flavor that can be used a wide variety of ways.  Saba has been part of Italian cooking since ancient Rome and is popular across many Mediterranean cultures.  We have several products that are derived from Saba.  Our Mosto d'Uva and Saba Grape Mosto Reduction are especially delightful!
