Sardinia is the second largest island in the Mediterranean; just a bit smaller than Sicily. Sardinia is also the fourth least populated region in Italy, with under two million inhabitants. The culinary history of Sardinia can be traced back thousands of years. One of the oldest Sardinian foods is probably pane carasau, or “music bread”. In fact, remains of a crispy flatbread like pane carasau have been found in archeological excavations of ancient Sardinian stone buildings.

Delicious Food From The Mountains and Pastures

Despite having 1,800 kilometers of beautiful rugged coastlines and stunning sandy beaches, fish and seafood dishes in Sardinia only become popular several centuries ago. Sardinia doesn’t have a long history of seafarers and fishermen. It is known as a “nation of shepherds”. In fact, sheep outnumber people on the island at approximately three to one! Because most of the populated regions tend to be farther inland, the origins of Sardinian food comes from the mountains and pastures. The reason Sardinian populated areas are primarily inland is because of a long history of raids from foreign invaders. For this reason, there is a saying that the sea brings “nothing but trouble”.

Cultural Influences From All Over

The Phoenicians first came to Sardinia in 880 B.C., followed by Carthaginians, Romans, Vandals, Byzantines, Arabs, Spanish, and several others. All of these cultures left a bit of their influence on Sardinian food today. The cuisine of Sardinia is now one that balances the traditional dishes of cheese, meats, and beans with Mediterranean influences such as myrtle and saffron. The result is, of course, delicious!
